What are the key responsibilities of the Bakery Production Manager?

Culinary Leadership and Expertise: Provide expert guidance and leadership in bakery production while also possessing a broad culinary skill set to support and oversee hot and cold line production. Ensure all food items meet the highest standards of quality and presentation.

Operational Management: Oversee overnight production operations, including scheduling, staffing, and workflow management across all areas (bakery, hot line, cold line, and fulfillment). Implement and maintain efficient operational procedures to maximize productivity and ensure deadlines are met.

Team Management and Development: Lead, motivate, and develop the overnight team, promoting a culture of excellence, accountability, and teamwork. Conduct regular performance evaluations and provide constructive feedback to foster skill development and career growth. 

Quality Control and Compliance: Ensure all food safety and hygiene standards are consistently met in accordance with company policies and regulatory requirements. Oversee the maintenance and proper use of equipment, arranging for repairs and replacements as needed.

Bakery Product Development: Collaborate with the Product team in menu planning and development, with a focus on bakery product offerings.

What does a strong applicant for this position have?

  • Proven pastry chef experience with a comprehensive culinary skill set and expertise in large-scale pastry production.
  • Strong leadership skills with a track record of managing kitchen teams and overseeing food production operations.
  • Excellent organizational, communication, and decision-making skills in a fast-paced environment.
  • Demonstrated commitment to high-quality standards, food safety, and precision in culinary arts.
  • Minimum of 5 years in a commercial kitchen environment, with at least 3 years in a management role training teams of 10+.
  • Familiarity with commercial kitchen equipment and food safety management practices; Food Safety Manager Certification required.
  • Physical ability to lift 50+ lbs and stand for extended periods; flexibility to work overnight shifts.
  • Positive attitude and tech-savvy, with a strong work ethic and desire to contribute to team success.
